Baking them with her as a child, I never quite understood why we’d leave them in the oven overnight, but the magic of waking up to perfectly crisp, sweet cookies was all the explanation I needed.

Recipe Highlight: Forgotten Kisses by Emeril Lagasse
These Forgotten Kisses are a delightful blend of tradition and whimsy. They’re light, airy, and the perfect way to share a little sweetness with friends and family.

Ingredients:

  • 2 egg whites, at room temperature

  • Pinch of salt

  • 1/2 cup granulated sugar

  • 1/2 tsp vanilla extract

  • 3/4 cup mini chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a clean bowl, beat the egg whites and salt until soft peaks form. Gradually add the sugar, 1 tablespoon at a time, beating until the mixture is glossy and stiff peaks form. Beat in the vanilla extract.

  3. Gently fold in the mini chocolate chips.

  4. Drop spoonfuls of the meringue mixture onto the prepared baking sheet.

  5. Place the baking sheet in the oven, then turn off the oven immediately. Leave the cookies in the oven overnight without opening the door. By morning, you’ll have perfectly crisp, sweet Forgotten Kisses ready to enjoy!
